This is a high limit disc which opens on temperature rise to break a circuit if temperatures rise above 250 degrees.
Notice the recessed mounting bracket which makes this disc surface flush to the stove surface, versus a bracket which places the disc surface about 1/4" beyond the bracket, as in part number L01-250
